Pony & Trap
The complete refit of the kitchen at the Pony & Trap was a very challenging project, most notably as chef/owner Josh Eggleton wanted to keep time closed to the minimum. This lead to us completing the works over 6 days, from 5pm Sunday to 8am Tuesday, working through the night to finish everything to Josh's very high standards.
Working with Control Induction and the Clay Oven Company to build a bespoke induction suite with a gas/solid fuel combined chargrill allows Josh to use the newest technology alongside the oldest form of cooking to create his menus.
With Bridge Catering Fabrications manufacturing a ceiling suspended gantry, and a pass and pastry section topped with granite from Marmobello, Josh now has a kitchen that looks and performs like one a Michelin starred restaurant should have.
The Pony & Trap was awarded a Michelin Star in the 2011 Guide and has maintained it for 7 years.
